These super cute sushi watermelons are made with mini cucumbers and sushi-grade tuna, giving a fun twist on traditional sushi. The cucumbers are filled with tasty tuna and served with a spicy kewpie mayonnaise and soy sauce.
Cut the cucumbers in half lengthwise and remove the seeds and insides.
Cut the tuna into strips about 1/2-inch wide and the same length as the cucumbers.
Place the tuna strips inside the hollowed out cucumbers and then cut the stuffed cucumbers into 1/2-inch pieces.
Sprinkle some black sesame seeds onto the pieces to make them look like watermelons.
In a small bowl, combine the kewpie mayonnaise and sriracha and mix well.
Dip the sushi watermelons into the spicy mayonnaise and soy sauce. Enjoy!
