A delicious low-carb spicy shrimp sushi wrap made with steamed shrimp mixed with mayo, gochujang, and other ingredients. The mixture is wrapped in a nori sheet along with various toppings and served with a spicy sauce.
Steam or cook 1 lb of shrimp and let it cool.
Finely chop the cooled shrimp and mix it in a bowl with 1 to 1.5 tbsp mayo, 1 tbsp gochujang (or 2 tbsp sriracha), 1 tbsp Tamari or soy sauce, 1 tbsp rice vinegar, and a pinch of salt.
Mix well, taste, and adjust as needed.
Grab a flat sushi nori sheet and cut it halfway up the middle to create 4 quadrants.
Fill each quadrant with 3 tbsp of the shrimp salad, 1/4 of an avocado, 1 tbsp cream cheese, cucumber slices, jalapeno, and carrot strips.
Start with the bottom left quadrant and fold up, then fold across, and fold down.
Serve as is or with a sauce on top.
For the spicy sauce, mix 2 tbsp mayo, juice of 1/2 lime, 1/2 tbsp gochujang (or 1 tbsp sriracha), and a pinch of salt.
Optionally dunk in sesame seeds for extra flavor.
