No Bake Blackberry Frozen Cheesecake
30 mins prepServes 8
This no-bake blackberry frozen cheesecake features a crust made of oats and prunes, a filling with cream cheese, blackberries, honey, and lemonade concentrate. Ideal for a refreshing dessert, it requires freezing for a few hours before serving.
1: Line an 8x8 square pan with parchment paper to easily release the cheesecake once set.
2: Place oats in a food processor and pulse for about 10 seconds.
3: Add the remaining ingredients for the crust and pulse until the mixture comes together, about 1-2 minutes.
4: Press the crust mixture into the prepared pan and refrigerate while making the filling.
5: In a small saucepan, heat the agar powder (or gelatin) and lemonade for about 1 minute to dissolve.
6: In a bowl, whip cream cheese and honey together.
7: Add the lemonade mixture to the cream cheese and mix thoroughly.
8: Split this mixture in half, adding blackberry puree to one half and fold to create a marble effect.
9: Pour the white cream cheese filling over the crust, followed by the blackberry mixture.
10: Freeze for about 3-4 hours.
11: Before serving, run a knife around the edge to loosen, then transfer to a serving plate.
12: Allow to thaw at room temperature for about 20 minutes before cutting.
