In a small bowl, combine the softened butter, minced garlic clove, chopped parsley, and a pinch of salt. Mix until well combined.
Spread the garlic butter evenly over one side of each slice of keto 'white' bread.
Preheat the oven to 350°F (175°C). Place the buttered bread slices on a baking sheet lined with parchment paper. Toast in the preheated oven for 7 minutes.
After toasting, remove the bread from the oven and sprinkle the shredded mozzarella cheese evenly over the buttered side of two slices. With your index finger drag the cheese out of the center towards the edges, then place the plain toast slice on top. Press the center of the bread with a spoon to make a well for the sauce.
Add 2 to 3 tbsp of tomato sauce in the center and spread it slightly towards the edges. Sprinkle some Italian seasoning and add the mozzarella cheese on top. Then, place the pepperoni on top.
Increase the oven temperature to 375°F (190°C). Return the baking sheet to the oven and bake for an additional 7 minutes, or until the cheese is melted and bubbly.
Remove it from the oven and garnish it with some freshly chopped parsley. Enjoy!
