1: Preheat oven to 200°C. 2: Wash and dry your sweet potatoes. 3: Prick them all over and brush with some oil. Bake for 45-50 minutes until soft or air fry for 25 minutes, or microwave. 4: Remove from the oven and let them cool. 5: Beat 2 eggs and mix with the milk. 6: Slice sweet potatoes in half, and gently mash the potato to form a well. 7: Season with salt and pepper, then add your desired veggies. 8: Pour in the egg mixture and top with feta. 9: Bake or air fry for a further 15-20 minutes.
